Prairie Spirits

We believe in taking the time to do things the right way — by hand. As a result, Prairie may be the world’s most meticulously crafted spirit. From those who care what goes in, to those who care what goes down.

Prairie’s single vintage organic corn is distilled to taste, not a prescribed number of times. That’s because climate, soil, and moisture levels give each small batch its own unique character. Preserving that character takes personal attention, giving our spirits an award-winning taste that can stand on its own.

Marvin Boike has set aside part of his land as a State Wildlife Management Area. Here he shares how the ecosystems have changed since he was young.

Prairie wildlife: a primer

Red Fox

Like a teenager sleeping the day away, foxes are seldom seen. But you’ll find their footprints in the cornrows.

Ring-necked Pheasant

Spends fall mornings gathering gravel in roadside ditches to better digest corn.

Brown Bat

Natural pesticide for an organic farmer. Find them swarming above the cornfields for a midnight snack.

Prairie Farmer

Often seen foraging for tools in sheds, bins, and cupboards, they’re nocturnal during harvest season.

Growing & Distilling Area Detail

After the harvest, the corn is brought to the farmer-owned distillery in Benson, Minnesota; a sustainable co-op that converts leftover corncobs into fuel and returns the leftover distillers grains to local farmers for use as feed. It’s a sustainable process for a community that takes pride in the work of their hands.

Once it leaves the distillery in Benson, Minnesota, Prairie spirits are bottled in the town of Princeton by Ed Phillips and Sons—a fifth generation and family-operated distilled spirits company.
